I am unable to get my xbox one to do anything using the mouse and keyboard. It seems like it is recognizing my controller and the serial converter seems to be working. I am not sure where the problem would be so any help would be appreciated, thanks! If you need any more info please just ask, I don't know much about how any of this works even after reading the wiki so I did the best I could.

Did you plug your controller to your computer? Turn it off first, plug it on the computer, run gimx and press start, then turn your controller on. Note that the controller should remain plugged to the computer

After changing to the libusbk drives (I think thats what its called) doing what you said seemed to work. Thanks!
