Generally no it does not work with PS5 but there are workarounds depending on what you're trying to do. If you're trying to use racing wheels on PS5 for example with Gran Turismo 7, people have done it as seen in this video https://www.youtube.com/watch?v=flacVr_ZVB8 (PS5 + GT7 + Simucube + GIMX).

If you're trying to use a keyboard and mouse, you can setup a remote play solution -- having a locally connected monitor and fast Ethernet on all devices can minimize latency greatly. Or you could buy a device such as Besavior U5 which allows you to use various alternate USB controllers on a PS5, which means that the GIMX should work as well (since it can authenticate with a PS4 dualshock if you connect it up).
